These are great for picnics and anything can be put in them
If you like Yorkshire Puddings you will love these….this recipe makes 12 bellies in a muffin tin
Preheat the oven to 200°C/180°C Fan/Gas 5.
Prepare your ingredients: quarter the mushrooms; dice the ham; trim and finely chop the spring onions.
Mix the mushrooms, ham and onion together.
Whisk the 8 medium eggs (skimmed milk if desired but not required) then add to the mushrooms, ham and spring onion and season
Line a muffin tin with paper cases or alternatively spray with fry light oil.
Spoon the mushroom mixture evenly between the cases and pour in the beaten egg.
Bake in the oven for 20-25 minutes, or until slightly risen and golden.
Great warm or cold. Perfect for an alternative to a sandwich
Alternatively you can swap in tomato and cheese

225g caster sugar
300g plain flour (sifted)
200g butter (melted)
1 tsp vanilla extract
A pinch of salt
100 – 200g chocolate chips

Take strips of chicken dip in bowl of mayonnaise then into a bowl of rice crispies and place on baking tray for 10-15 min in oven.
Ideal for lunch or take on a picnic cold
